Understand the difference between marketplace commissions, direct online ordering, payment fees, and flat-fee courier dispatch.
Marketplace orders and direct orders solve different problems. Marketplace commissions can fund customer discovery, logistics, support, and payments. Direct ordering lets a restaurant acquire the customer through its own channels, but payment processing, marketing, support, and optional courier costs still remain.

“Commission-free” should describe the ordering software's percentage charge. It should not imply that payments, couriers, promotions, refunds, or labour are free. Ask vendors to put every applicable cost beside the channel that creates it.
The Alternative: Direct Ordering + Dispatch APIs
A restaurant can accept an order on its own website and request a courier through a dispatch service such as DoorDash Drive On-Demand. DoorDash's Canadian merchant page describes this as a flat delivery fee per order rather than a percentage commission. Fees vary by market and product, so verify the amount for your location.

When a marketplace can still be worth the cost
A marketplace can be valuable when it introduces a genuinely new guest, provides delivery coverage the restaurant cannot operate, or fills low-demand periods profitably. The question is not whether every commission is bad. The question is whether the channel produces contribution margin and a useful customer relationship after all costs.
Keep marketplace and direct performance separate in reporting. Track order count, average order value, discounts, refunds, courier cost, preparation time, and repeat behaviour by channel. A blended “online sales” number hides the information needed to make a sound decision.
A practical direct-order launch
- Choose a focused menu with accurate photos, modifiers, availability, and preparation times.
- Test pickup, delivery zones, taxes, tips, discounts, refunds, and sold-out items.
- Place the direct-order link on the restaurant website and Google Business Profile.
- Give existing guests a clear reason to order direct, without promising savings the restaurant cannot sustain.
- Train the kitchen and front of house on order alerts, handoff, delays, and guest support.
- Review channel contribution margin after the first 30 days and adjust the menu or offer.
